No-Bake Banana Chocolate Dessert Cups

Banana chocolate dessert cups bring together creamy mascarpone, fresh banana slices, chocolate-hazelnut spread, and a buttery-tasting cookie crumb base. Served in individual glasses, they make a spoonable dessert with contrasting layers and no oven required.

This tiramisu-inspired variation uses whipped cream rather than raw eggs, with no coffee or alcohol added. Prepare the cups a few hours before serving, then finish with fresh banana and a light dusting of cocoa.

Recipe Overview

  • Prep time: Approximately 20 minutes
  • Cook time: None
  • Chill time: 2 hours
  • Total time: Approximately 2 hours 20 minutes
  • Servings: 6 small dessert cups
  • Equipment: Six 8-ounce glasses, two mixing bowls, an electric mixer, and a spatula

Ingredients

  • 100 g graham crackers, crushed into crumbs
  • 225 g mascarpone cheese, cold
  • 180 ml heavy whipping cream, cold (¾ cup)
  • 20 g powdered sugar (about 2½ tablespoons)
  • 1 teaspoon vanilla extract
  • 120 g chocolate-hazelnut spread
  • 2 medium ripe but firm bananas
  • 1 teaspoon unsweetened cocoa powder, for finishing
  • Extra banana slices, optional, added just before serving

How to Make Banana Chocolate Dessert Cups

1. Prepare the crumb base

Place the graham crackers in a sealed food bag and crush them with a rolling pin. Aim for mostly fine crumbs with a few small pieces for texture.

Divide the crumbs between six glasses. Gently level them with a spoon without packing them into a hard crust. There is no need to add melted butter because the dessert will be eaten directly from the glasses.

2. Whip the cream

Pour the cold heavy cream into a chilled bowl. Beat until medium peaks form: the cream should hold its shape, with the tip of a lifted peak bending slightly.

Stop before the cream looks grainy. Keeping it softly whipped makes it easier to fold into the mascarpone.

3. Make the mascarpone filling

In a separate bowl, briefly stir the mascarpone with the powdered sugar and vanilla until smooth.

Fold in one-third of the whipped cream to loosen the cheese. Add the remaining whipped cream in two batches, folding gently with a spatula until no streaks remain.

Avoid beating the finished mixture aggressively, which can make it lose its smooth texture.

4. Prepare the chocolate and bananas

Stir the chocolate-hazelnut spread until it is easy to spoon.

If it is too stiff, place the measured spread in a heatproof bowl over warm water for a short time, stirring until softer. Keep water out of the spread and let it cool before layering it with the cream.

Peel and slice the bananas just before assembly.

5. Build the layers

Spoon half of the mascarpone filling over the crumb bases, dividing it evenly among the glasses.

Add the banana slices, then distribute the chocolate-hazelnut spread in small spoonfuls over the fruit. Use the back of a teaspoon to spread it lightly rather than pressing down into the cream.

Finish with the remaining mascarpone filling. Leave a little space at the top of each glass for the garnish.

6. Chill and serve

Cover the glasses and refrigerate for about 2 hours, until the filling feels firmer.

Just before serving, dust lightly with cocoa powder. Add any extra banana slices at this stage so they look freshly cut.

Recipe Tips

Choose firm bananas. Yellow bananas with a few brown freckles are a useful choice. Very soft fruit can turn mushy during layering.

Keep the chocolate layer modest. A thick layer of spread becomes denser when chilled and can dominate each spoonful.

Use a piping bag for tidy glasses. Transfer the mascarpone mixture to a piping bag or a food-safe bag with one corner snipped off. Pipe close to the center to avoid smearing the rims.

Expect the crumbs to soften. The base gradually absorbs moisture from the filling. For extra crunch, reserve a small spoonful of crumbs to sprinkle on each cup immediately before serving.

Variations and Substitutions

  • Different cookies: Replace the graham crackers with an equal weight of digestive biscuits or vanilla wafer cookies. Sweetness and texture will vary.
  • Less sweetness: Reduce the powdered sugar to 10 g if your cookies and spread are especially sweet.
  • Cream cheese variation: Use full-fat cream cheese in place of mascarpone for a tangier filling. Soften it briefly and beat it smooth before folding in the cold whipped cream.
  • Without hazelnuts: Choose a chocolate spread made without nuts and check all ingredient labels if preparing the dessert for someone with an allergy.

Make-Ahead and Storage

For the freshest banana flavor and appearance, assemble the cups on the day you plan to serve them. Keep them covered in the refrigerator and aim to enjoy them within 24 hours for best quality.

Add the garnish at serving time. Banana slices may darken during storage, and the cookie base will become softer.

Freezing is not recommended for this version because thawing can change the texture of both the fruit and the cream.

Food Safety Notes

Use pasteurized dairy products and keep the assembled desserts refrigerated at 40°F (4°C) or below.

Do not leave them at room temperature for more than 2 hours in total, or more than 1 hour when the temperature is above 90°F (32°C).

The recipe contains dairy and usually wheat and hazelnuts. Depending on the brands, the spread or cookies may also contain soy or eggs, so check the packaging when serving guests with allergies.
