Preheat your oven to 425°F (220°C) to ensure it is hot enough for even roasting.
In a large mixing bowl, combine the halved baby potatoes with the minced garlic, extra virgin olive oil, freshly squeezed lemon juice, lemon zest, dried oregano, smoked paprika, salt, and freshly cracked black pepper.
Using your hands or a spatula, toss the potatoes thoroughly until each piece is generously coated in the flavorful seasoning mixture.
Arrange the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. Halfway through the roasting time, give them a good stir to promote even browning.
Once the potatoes are done, remove the baking sheet from the oven and allow them to rest for a few minutes.
Just before serving, garnish the roasted potatoes with a generous sprinkle of finely chopped fresh parsley.
