Instructions
Begin by preheating your oven to 350°F (175°C). This will ensure it's ready for your crust after prep.
In a mixing bowl, combine the graham cracker crumbs and granulated sugar, mixing well. Pour in the melted butter and stir until the crumbs are fully coated and the mixture resembles wet sand.
Transfer this crumb mixture into an 8x8 inch baking pan. Use the back of a measuring cup or your fingertips to press the mixture firmly into the bottom, ensuring an even and compact crust. Bake in the preheated oven for 8-10 minutes until it achieves a delicate golden color. Once baked, take it out and set aside to cool slightly while you prepare the filling.
In a separate bowl, whisk together the sweetened condensed milk, fresh key lime juice, lime zest, egg yolks, and a pinch of salt. Continue whisking until the mixture is smooth and well combined, with no lumps remaining.
Carefully pour the luscious key lime filling over the cooled crust, using a spatula to spread it evenly across the base.
Return the pan to the oven and bake for an additional 15-20 minutes. You’re looking for the filling to be set yet still gently jiggly in the center, as it will continue to firm up as it cools down.
Once baked, remove the pan from the oven and allow the bars to cool to room temperature. After cooling, refrigerate for at least 3 hours until fully chilled and firm.
Once the bars are chilled, slice into squares with a sharp knife. For an extra indulgent touch, serve each square with a dollop of whipped cream and a decorative slice of lime on top, if desired.
