Instructions
In a small saucepan, blend together the almond milk, pumpkin puree, maple syrup, and pumpkin pie spice.
Place the saucepan over medium heat, stirring the mixture continuously. Heat until it's warm—be cautious not to let it reach a boil.
When the mixture is hot, remove the saucepan from heat and stir in the pure vanilla extract.
Prepare your espresso shot or brew a strong cup of coffee.
Pour the brewed coffee into a large mug. Gradually whisk in the warm pumpkin-spice milk mixture.
If you desire, top your latte with a generous dollop of vegan whipped cream and finish with a light dusting of additional pumpkin pie spice.
