Instructions
Begin by melting 2 tablespoons of unsalted butter in a large skillet over medium heat. Once melted and sizzling, add the cubed chicken breast and sauté for approximately 5-7 minutes, or until the chicken is golden brown and completely cooked through. Once done, transfer the chicken to a plate and set aside.
In the same skillet, add the remaining 2 tablespoons of butter. When the butter has melted, add the finely chopped onion. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and soft.
Next, add the minced garlic and freshly grated ginger to the skillet. Sauté the mixture for another 1-2 minutes, or until the aromas develop, being careful not to burn the garlic.
Incorporate the ground cumin, paprika, turmeric, and garam masala into the skillet, stirring well to coat the onions and garlic evenly with the spices, allowing their flavors to meld.
Carefully pour in the chicken broth and heavy cream, stirring to combine all the ingredients into a rich sauce. Allow the mixture to simmer gently for about 5 minutes, allowing it to thicken slightly.
Return the previously cooked chicken to the skillet, stirring well to combine with the flavorful sauce. Season generously with salt and freshly cracked black pepper to taste. Let the entire mixture simmer for an additional 3-4 minutes, allowing the chicken to soak in the delicious flavors.
Remove the skillet from heat and garnish the dish with freshly chopped cilantro, adding a burst of color and freshness just before serving.
