Instructions
In a small bowl, combine the soy sauce, honey (or maple syrup), toasted sesame oil, and a pinch of black pepper. Whisk until well blended to create your teriyaki sauce. Set this flavorful mixture aside.
Preheat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil, ensuring it coats the surface. Once the oil shimmers, carefully add the beef slices in a single layer. Sear the beef for about 2-3 minutes, or until nicely browned and cooked through. Remove the beef from the skillet and place it onto a plate, covering it loosely to keep warm.
Without cleaning the skillet, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and grated ginger, sautéing for about 30 seconds until aromatic. Be sure to stir continuously to prevent burning.
Next, add the sliced bell pepper, broccoli florets, and julienned carrot to the skillet. Stir-fry the vegetables for 3-4 minutes, allowing them to soften slightly while maintaining their vibrant crunch.
Return the cooked beef to the skillet along with the prepared teriyaki sauce. Use a spatula to stir everything together, ensuring an even coating of sauce over the meat and vegetables.
Gradually pour the cornstarch slurry into the skillet, stirring constantly. Continue cooking for an additional 1-2 minutes until the sauce has thickened to your desired consistency.
Just before removing from heat, sprinkle in the chopped green onions, mixing them through the stir-fry for a fresh burst of flavor.
Serve the stir-fry hot over a bed of cooked rice or noodles. Garnish with a generous sprinkle of sesame seeds and additional green onions for a delightful finish.
