1 pound baby carrots (or substitute with regular carrots, peeled and cut into sticks)

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 medium lemon

Juice of 1 medium lemon

1 teaspoon honey (or maple syrup for a vegan alternative)

1 teaspoon dried thyme (fresh thyme works beautifully if you have it)

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Start by preheating your oven to 425°F (220°C). This high heat will help the carrots caramelize beautifully.

    In a large mixing bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, honey, dried thyme, salt, and pepper until the mixture is well blended and fragrant.

      Add the baby carrots to the bowl, ensuring each piece is generously coated in the zesty garlic mixture. Toss them gently but thoroughly for even coverage.
