In a blender, combine the sliced strawberries and honey or agave syrup. Blend until smooth to form a strawberry puree. Transfer to a bowl and set aside.
In a small mixing bowl, add the matcha green tea powder and pour in the hot water. Whisk vigorously until fully dissolved and frothy.
In a saucepan, heat your chosen milk over medium heat, stirring occasionally. Do not let it boil.
Once the milk is warm, use a frother to whip it into frothy bubbles if desired. Skip this step for an iced version.
In a tall glass, spoon the strawberry puree into the bottom.
Gently pour the frothed milk over the strawberry puree, pouring slowly to keep the layers distinct.
Carefully pour the whisked matcha over the milk, allowing it to float on top.
Add a dollop of whipped cream on top and garnish with fresh strawberry slices if desired.
Serve immediately, with a straw for swirling the layers together or a gentle stir to combine the flavors.
Notes
Adjust sweetness to taste and use cold milk for an iced version.
