In a medium skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until it becomes translucent, about 4-5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant. Remove from heat and allow the mixture to cool slightly.
In a large mixing bowl, combine the ground turkey with the sautéed onion and garlic mixture. Next, add the chopped spinach, crumbled feta cheese, whole wheat breadcrumbs, dried oregano, black pepper, and a pinch of salt. Using your hands, gently mix the ingredients together until well combined—be cautious not to overmix to keep the patties tender.
Divide the turkey mixture into equal portions and shape each portion into a burger patty. You should be able to form about 4-5 patties, depending on how thick you prefer them.
Preheat your grill or skillet over medium-high heat. Cook the patties for about 5-7 minutes on each side. Check that they reach an internal temperature of 165°F (74°C) and show a nice golden brown color before removing them from the heat.
If you're using burger buns, you can light toast them on the grill or use a toaster while the patties are cooking to add an extra crunch.
Place each cooked patty on a toasted burger bun. Top with your favorite ingredients like crisp lettuce, juicy tomato slices, fresh cucumber, and a generous dollop of tzatziki sauce for extra flavor and freshness.
