1/2cupfresh lemon juice (approximately 4-5 lemons)

Instructions
Begin by placing the sliced strawberries, fresh lemon juice, honey or maple syrup, filtered water, and a pinch of salt into a blender. Blend on high until the mixture is completely smooth and well incorporated, ensuring there are no chunks of fruit left.
Taste the blended mixture and adjust the sweetness if desired by adding more honey or syrup, blending again for a few seconds to combine any additional ingredients.
Carefully pour the strawberry lemonade mixture into popsicle molds, filling each mold about three-quarters full to allow space for expansion during the freezing process.
If you'd like to enhance the flavor, tuck a few fresh mint leaves into each popsicle mold before inserting the sticks.
Insert the popsicle sticks into the molds and place them in the freezer. Allow them to freeze for about 4 to 6 hours, or until they are completely solid.
To easily remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This should help them slide out without any hassle.
Notes
For an attractive display, serve the popsicles on a decorative plate. Garnish with extra fresh strawberry slices and sprigs of mint.
