Instructions
Begin by seasoning both sides of the chicken breasts generously with salt and freshly cracked black pepper.
In a large skillet, combine the extra-virgin olive oil and half of the unsalted butter over medium heat.
Carefully place the seasoned chicken breasts in the skillet and sear for about 6-7 minutes on each side.
Remove the chicken from the skillet and set aside on a plate, keeping it warm.
Using the same skillet, add the minced garlic and sauté for approximately 30 seconds.
Pour in the freshly grated lemon zest and juice, stirring well to combine.
Add the honey and thyme, continuing to mix everything thoroughly.
Lower the heat to a gentle simmer, then return the cooked chicken to the skillet.
Add the remaining unsalted butter, allowing it to melt into the sauce and baste the chicken for another 2-3 minutes.
Remove the skillet from the heat and garnish with finely chopped fresh parsley and lemon slices before serving.
Notes
Serve with steamed vegetables or a fresh salad for a complete meal.
