Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
Open the can of chickpeas and drain them in a colander. Rinse thoroughly under cold running water to remove any canning liquid. Spread the chickpeas out on a clean kitchen towel or paper towels and pat them dry until all excess moisture is removed.
In a large mixing bowl, add the dried chickpeas along with the extra virgin olive oil, smoked paprika, garlic powder, cayenne pepper, ground cumin, and a sprinkle of salt. Toss the chickpeas until they are evenly coated with the seasoning mixture.
Transfer the seasoned chickpeas onto the prepared baking sheet, spreading them out in a single layer to ensure they cook evenly and become crispy.
Roast the chickpeas in the preheated oven for 25 to 30 minutes. Midway through the cooking time, gently shake the pan to toss the chickpeas.
After roasting, remove the baking sheet from the oven and let the chickpeas cool slightly. If you like, sprinkle fresh chopped parsley over the top for a vibrant finish.
