1 teaspoon baking powder

1 teaspoon dried thyme

In a large mixing bowl, whisk together the buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, and a generous pinch of salt and pepper until well combined.

    Add the chicken pieces to the buttermilk marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 4 hours, or ideally overnight to enhance the flavor and tenderness of the chicken.

      In a separate bowl, mix the all-purpose flour, baking powder, dried thyme, and a pinch of salt. Stir together until evenly combined.

        Once marinated, take the chicken out of the refrigerator and allow excess buttermilk to drip off.

          Dredge each piece of chicken in the seasoned flour mixture, pressing down lightly to form a thick coating. Shake off any excess flour before placing it aside.

            In a large skillet or deep fryer, pour in enough vegetable oil to reach about 2 inches deep and heat it to 350°F (175°C). Use a thermometer to check the oil temperature for optimal frying.
