Instructions
Begin by rinsing the jasmine rice. Place the rice in a fine mesh strainer and run it under cold water, swirling gently until the water runs clear. This step removes excess starch, ensuring your rice will be fluffy. Drain thoroughly to eliminate any water.
In a medium-sized saucepan, combine the drained jasmine rice, coconut milk, water, lime zest, granulated sugar, and fine sea salt. Stir the mixture well to ensure the rice is evenly coated and the ingredients are blended.
Set the saucepan over medium-high heat and allow the mixture to come to a gentle boil. Watch carefully to prevent it from boiling over.
As soon as the mixture reaches a boil, cover the saucepan tightly with a lid. Reduce the heat to low to maintain a gentle simmer.
Allow the rice to simmer on low heat for approximately 15 minutes or until all the liquid has been absorbed and the rice becomes tender. Refrain from lifting the lid during this time to keep the steam sealed inside.
After the 15-minute cooking time, remove the saucepan from the heat. Keep it covered and let it sit for an additional 5 minutes. This resting period allows the rice to finish steaming, making it even fluffier.
After resting, use a fork to fluff the rice gently. Then, pour in the fresh lime juice and fold it into the rice carefully, ensuring that it’s nicely incorporated.
Taste your coconut lime rice and adjust the seasoning if needed, adding a pinch more salt or sugar to suit your palate.
