Instructions
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the rolled oats, shredded coconut, chopped almonds, sea salt, and ground cinnamon. Stir until evenly mixed.
In another bowl, whisk together the almond butter, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and stir gently to coat. If using, fold in the dried cranberries or other dried fruit.
Take small portions of the mixture and squeeze them to form clusters. Place them on the lined baking sheet, leaving space between each.
Bake for 20-25 minutes, stirring halfway through for even browning. The granola should be golden brown when done.
Remove from the oven and let cool completely on the baking sheet to firm up.
Once cooled, break up larger clusters if desired and store in an airtight container at room temperature for up to two weeks.
