Instructions
Begin by rinsing the long-grain white rice under cold running water until the water is clear.
In a medium saucepan, heat the extra-virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the rinsed rice to the saucepan, stirring to coat the grains with the oil and garlic. Toast the rice for about 2-3 minutes until slightly golden.
Pour in the vegetable broth or water, bringing the mixture to a vigorous boil.
Reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it simmer for approximately 15-20 minutes until the liquid is absorbed.
Remove the saucepan from heat and let it rest, still covered, for an additional 5 minutes.
Use a fork to gently fluff the rice. Stir in the lime zest, fresh lime juice, finely chopped cilantro, ground cumin, salt, and black pepper.
Taste the rice and adjust the seasoning if needed, then serve warm.
Notes
Serve in a vibrant bowl, garnished with extra cilantro leaves and lime wedges.
