Begin by preheating your oven to 350°F (175°C). Prepare two baking sheets by lining them with parchment paper for easy cookie removal later.
In a large mixing bowl, combine the softened butter, granulated sugar, and packed brown sugar. Use a hand mixer or stand mixer to cream these together until the mixture is light and fluffy, which should take about 2-3 minutes.
Next, incorporate the vanilla extract and the eggs, adding them one at a time and ensuring each egg is fully mixed in before adding the next.
In a separate bowl, whisk together the all-purpose flour, baking soda, and fine sea salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
Once the dough is mixed, fold in the semi-sweet chocolate chips, ensuring they are evenly distributed throughout the dough.
Using a tablespoon or a cookie scoop, portion out dough onto the prepared baking sheets, spacing each scoop about 2 inches apart.
Bake in the preheated oven for 10-12 minutes. Remove them when the edges are golden brown, but the centers should still look slightly undercooked.
After baking, allow the cookies to sit on the baking sheets for 5 minutes to set. Then, carefully transfer them to a wire rack to cool completely.
Once your cookies have cooled, take a generous scoop of vanilla ice cream and place it on the flat side of one cookie.
Top the ice cream with another cookie, flat side down, and gently press down to form a lovely sandwich.
Repeat this process with the remaining cookies and ice cream until all are assembled.
Serve the ice cream sandwiches on a decorative platter. For a festive touch, drizzle some melted chocolate or caramel sauce over the top just before serving.
Notes
For an extra special touch, roll the sides of the ice cream sandwiches in mini chocolate chips or colorful sprinkles.
